Ingredients

  • 4 large russet potatoes
  • 0.25 cup olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried rosemary
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Wash and scrub the potatoes thoroughly. Leave the skin on for extra texture and flavor.
  3. Using a mandoline slicer or a sharp knife, slice the potatoes into very thin rounds (about 1/8 inch thick).
  4. Place the potato slices in a large bowl and cover them with cold water. Let soak for 20-30 minutes to remove excess starch, which will help them crisp up better.
  5. After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.
  6. In a small bowl, mix the olive oil, minced garlic, dried rosemary, salt, black pepper, and smoked paprika (if using).
  7. In a large mixing bowl, toss the dry potato slices with the garlic herb oil mixture until they are evenly coated.
  8. Arrange the potato slices in a single layer on the prepared baking sheets, making sure they do not overlap.
  9. Bake in the preheated oven for 15-20 minutes, flipping the potato chips halfway through to ensure even cooking. Keep an eye on them toward the end to prevent burning. They should be golden and crispy when done.
  10. Remove the chips from the oven and let them cool for a few minutes on the baking sheets before transferring to a wire rack. This will help them crisp up further.
  11. Enjoy your homemade potato chips with your favorite dip, or snack on them plain!
