Ingredients

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup honey
  • 1 cup unsweetened applesauce
  • 0.5 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 cup finely chopped apples
  • 0.5 cup sliced almonds
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, whisk together the flour, rolled oats, baking powder, baking soda, cinnamon, and salt until well combined. Set aside.
  3. In another bowl, beat together the honey, applesauce, oil, and eggs until smooth. Add the vanilla extract and mix.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Fold in the chopped apples and sliced almonds to the batter, making sure they are evenly distributed.
  6. Pour the batter into the prepared baking pan, and smooth the top with a spatula. Sprinkle additional sliced almonds on top for garnish.
  7. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
