Ingredients

  • 1 lb baby carrots
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a bowl, whisk together the melted butter, honey, minced garlic, fresh thyme, salt, and pepper until well combined.
  3. Place the baby carrots on the prepared baking sheet. Drizzle the honey garlic butter mixture over the carrots, ensuring they are well coated. Toss the carrots gently to evenly distribute the sauce.
  4. Spread the carrots out in a single layer on the baking sheet to ensure even roasting.
  5. Roast the carrots in the preheated oven for about 25-30 minutes, tossing them halfway through, until they are tender and caramelized.
  6. Once roasted, remove the carrots from the oven and let them cool slightly.
  7. Taste and adjust seasonings if necessary, then transfer to a serving platter. Garnish with freshly chopped parsley.
