Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • to taste salt and pepper
  • optional chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the honey, olive oil, minced garlic, thyme, salt, and pepper. Whisk together until well mixed.
  3. Add the carrot sticks to the bowl and toss until they are thoroughly coated in the honey garlic mixture.
  4. Spread the coated carrots in a single layer on the prepared baking sheet. Make sure they are evenly spaced to allow for even roasting.
  5. Roast the carrots in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, tossing halfway through cooking for even browning.
  6. Once done, remove the carrots from the oven and let them cool slightly. If desired, sprinkle with chopped parsley for a fresh touch.
