Honey Harissa Carrots With Whipped Feta Delight
Ingredients
- 1 pound baby carrots, trimmed and peeled
- 2 tablespoons harissa paste
- 2 tablespoons honey
- 2 tablespoons olive oil
- to taste salt and pepper
- 1 cup feta cheese, crumbled
- 1 4 cup Greek yogurt
- 1 tablespoon lemon juice
- for garnish fresh parsley, chopped
- optional toasted pistachios, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the baby carrots, harissa paste, honey, olive oil, salt, and pepper. Toss the carrots until they are well coated.
- Spread the coated carrots evenly on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
- While the carrots are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta cheese, Greek yogurt, and lemon juice. Blend until smooth and creamy. Adjust seasoning with salt if needed.
- Once the carrots are done roasting, remove them from the oven and let them cool slightly.
- To assemble, spread the whipped feta generously on a serving platter and top it with the warm honey harissa carrots.
- Garnish with fresh parsley and chopped toasted pistachios for added flavor and crunch.
