Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tablespoons honey
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 0.25 cup pecans, roughly chopped (optional)
  • 0.25 cup grated Parmesan cheese (optional)
  • as needed Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine honey, whole grain mustard, olive oil, garlic powder, onion powder, salt, and pepper. Whisk until well mixed.
  3. Add the trimmed and halved Brussels sprouts to the bowl and toss them in the honey mustard mixture until evenly coated.
  4. Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the Brussels sprouts are golden brown and crispy on the edges, stirring halfway through to ensure even cooking.
  6. If using, sprinkle chopped pecans over the Brussels sprouts during the last 5 minutes of roasting for added crunch.
  7. Once done, remove from the oven and immediately sprinkle with grated Parmesan cheese, allowing it to melt slightly.
  8. Garnish with freshly chopped parsley before serving.

Optional toppings include pecans and Parmesan cheese for added flavor.
