Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup chocolate chips (semi-sweet or dark)
  • 0.25 cup mini marshmallows
  • to taste extra chocolate chips and marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.
  3. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips and mini marshmallows gently until evenly distributed throughout the dough.
  7. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Press a few extra chocolate chips and mini marshmallows on top of each cookie for a visually appealing finish.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center is still soft.
  10. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
