Ingredients
- 1 large head romaine lettuce, chopped
- 1 cup homemade Avanaise (avocado-based mayonnaise)

- 0.5 cup croutons (store-bought or homemade)
- 1 clove garlic, minced
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice

- 1 teaspoon anchovy paste (optional)

Instructions
- Prepare the Avanaise: In a bowl, combine the avocado, minced garlic, Dijon mustard, lemon juice, salt, and pepper. Blend until smooth. This will serve as your creamy dressing—adjust the seasoning to taste. If you want an umami boost, mix in the anchovy paste.
- Wash and Chop the Lettuce: Rinse the romaine lettuce under cold water and dry thoroughly using a salad spinner or paper towels. Chop into bite-sized pieces.
- Assemble the Salad: In a large salad bowl, combine the chopped romaine, croutons, and half of the Parmesan cheese. Drizzle the Avanaise dressing over the salad and toss gently to coat all the ingredients evenly.
