Ingredients

  • 1 lb ground beef
  • 8 slices crispy bacon, chopped
  • 1 cup cheddar cheese, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 4 large flour tortillas
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • ½ cup pickles, sliced
  • ¼ cup red onion, finely chopped
  • ½ cup ketchup
  • ¼ cup mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper
  • for frying oil cooking oil

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels, leaving the rendered fat in the pan.
  2. In the same skillet, add the ground beef, breaking it apart with a spatula. Season with garlic powder, onion powder, salt, and pepper. Cook until browned and fully cooked (about 6-8 minutes). Drain excess fat if necessary.
  3. Stir in the crispy bacon and both cheddar and Monterey Jack cheese into the cooked beef. Let it melt slightly (about 2 minutes).
  4. Warm the flour tortillas slightly in another pan or microwave to make them pliable.
  5. On each tortilla, layer in about ¼ of the beef and bacon mixture, followed by shredded lettuce, diced tomatoes, pickles, red onions, ketchup, and mustard.
  6. Fold in the sides of the tortilla and then roll it tightly from the bottom up.
  7. In a clean skillet, heat a little cooking oil over medium heat. Place the burritos seam-side down and cook until golden brown on all sides (about 2-3 minutes per side).
  8. Remove from heat, let cool for a minute, and slice in half to reveal the delicious layers inside.

💡 Chef's Notes

Serve with a side of extra ketchup and mustard for dipping, and garnish with fresh herbs or more shredded lettuce on the plate for color.
