Ingredients

  • 8 pieces fresh jalapeños, halved and seeds removed
  • 1 cup cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup breadcrumbs (preferably panko for extra crunch)
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh cilantro
  • for brushing cooking spray or olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well blended.
  3. Using a spoon or piping bag, generously fill each jalapeño half with the cheese mixture, pressing down slightly to secure it.
  4. In a separate bowl, place the breadcrumbs and lightly season them with salt and pepper.
  5. Gently press each filled jalapeño into the breadcrumbs, coating the cheese filling completely.
  6. Arrange the jalapeño popper bites on the baking sheet. For added crunch, you can lightly brush or spray the tops with cooking spray or olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the breadcrumb topping is golden brown and crispy.
  8. Once done, remove from the oven and let them cool for a few minutes. Garnish with chopped fresh cilantro before serving.

💡 Chef's Notes

For extra crunch, use panko breadcrumbs.
