Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup diced fresh jalapeños
  • 0.5 cup breadcrumbs
  • 0.25 cup green onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts in a greased 9x13 inch baking dish. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, and chopped green onions. Mix well until all ingredients are blended together.
  4. Use a sharp knife to create a pocket in each chicken breast. Generously fill each pocket with the jalapeño cheese mixture, pressing it down gently to secure.
  5. In a small bowl, mix the breadcrumbs with olive oil until they are all coated. Sprinkle the breadcrumb mixture evenly over the stuffed chicken breasts.
  6. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden and crispy.
  7. Once done, remove the chicken from the oven and let it rest for 5 minutes before serving.
