Ingredients

  • 1 lb kielbasa, sliced into half-moons
  • 2 medium apples (Gala or Honeycrisp), cored and sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • to taste salt and pepper
  • 2 tablespoons apple cider vinegar
  • for garnish fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced kielbasa to the skillet and sauté until it starts to brown, approximately 4-5 minutes.
  3. Add the sliced onion and garlic to the skillet. Continue to cook, stirring occasionally until the onion is translucent, about 3-4 minutes.
  4. Toss in the apple slices and sprinkle with cinnamon, nutmeg, salt, and pepper. Stir well to combine.
  5. Cook for an additional 5-7 minutes until the apples are tender but not mushy.
  6. Drizzle the apple cider vinegar over the mixture and cook for another minute, allowing the flavors to meld together.
  7. Remove from heat and garnish with freshly chopped parsley before serving.
