Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 zest of lemon
  • 1 large lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper. Mix well. Add the chicken pieces to the bowl and toss until they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  2. Heat a non-stick skillet over medium-high heat.
  3. Add the marinated chicken bites to the hot skillet in a single layer. Cook for about 3-4 minutes on one side until golden brown. Flip the pieces and cook for an additional 3-4 minutes until the chicken is cooked through and has a nice golden crust.
  4. Pour any leftover marinade from the bowl over the chicken bites in the skillet and cook for another 1-2 minutes, allowing the sauce to thicken slightly and coat the chicken.
  5. Remove the skillet from heat and sprinkle the chopped parsley over the chicken bites for a fresh touch.

Serve with lemon wedges and fresh parsley for garnish.
