Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 zest lemon
  • for garnish fresh parsley, chopped
  • as needed skewers (bamboo or metal)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine olive oil, lemon juice, minced garlic, smoked paprika, dried oregano, lemon zest, salt, and pepper. Whisk together until well combined.
  2. Marinate the Shrimp: Add the shrimp to the bowl, ensuring they are well coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (up to 1 hour for more flavor).
  3. Preheat the Grill: If using a grill, preheat it to medium-high heat. If using an oven, preheat to broil.
  4. Assemble the Skewers: Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer, leaving a little space between each shrimp for even cooking.
  5. Cook the Skewers: Grill the skewers on the grill for about 2-3 minutes per side, or until the shrimp are pink and opaque. If broiling, place skewers on a baking sheet and broil for 5-6 minutes, turning halfway through.
  6. Serve: Once cooked, remove from the grill/oven and let them rest for a minute. Garnish with freshly chopped parsley.
