Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.25 cup olive oil
  • 0.25 cup fresh lemon juice
  • 1 piece zest of lemon
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Instructions

  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, oregano, salt, and pepper to create a marinade.
  2. Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag, ensuring the chicken is well coated, and refrigerate for at least 1 hour, or up to 4 hours for extra flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, letting any excess marinade drip off. Discard the remaining marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

💡 Chef's Notes

Serve the grilled chicken on a wooden platter with lemon wedges and fresh herbs on the side for visual appeal. A sprinkle of extra herbs just before serving adds a vibrant touch!
