Lemon Herb Grilled Chicken Skewers Flavorful Delight
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large lemon, juice and zest
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon smoked paprika

- 1 medium red bell pepper, cut into chunks
- 1 medium zucchini, sliced into thick rounds

Instructions
- In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, thyme, smoked paprika, salt, and pepper. Mix well to create a marinade.
- Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken cubes, red bell pepper chunks, and zucchini slices onto the skewers, alternating between chicken and vegetables for a colorful presentation.
- Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.
- Remove the skewers from the grill and let them rest for a couple of minutes.
- Serve hot, garnished with fresh herbs if desired.
