Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 unit lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions

  1. In a mixing bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped parsley, chopped basil, dried oregano, salt, and pepper until well combined.
  2. Add the peeled and deveined shrimp to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator for at least 30 minutes to 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
  5. Place the shrimp skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Avoid overcooking them to ensure they remain tender.
  6. Remove the shrimp from the grill and serve immediately with lemon wedges on the side for an extra burst of flavor.

For best results, do not overcook the shrimp.
