Lemon Pepper Chicken Skewers Recipe: A Perfect Summer Delight
Ingredients
- 1 pound chicken breast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 lemon zest of
- 3 tablespoons fresh lemon juice
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 bunch fresh parsley, chopped (for garnish)
- 1 package bamboo skewers (soaked in water for 30 minutes)
Instructions
- In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, paprika, and salt. Whisk until well blended.
- Add the cubed chicken breast to the marinade and stir to coat each piece thoroughly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for deeper flavor.
- Preheat your grill or grill pan over medium-high heat.
- While the grill is heating, thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece for even cooking.
- Once the grill is ready, place the skewers on it and cook for about 8-10 minutes, turning occasionally until the chicken is golden brown and fully cooked (internal temperature should reach 165°F).
- Remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh chopped parsley before serving.
