Loaded Baked Potato Gnocchi Flavorful and Comforting Dish
Ingredients
- 2 cups potato gnocchi
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 0.5 cup cooked bacon, crumbled
- 0.5 cup green onions, sliced
- 1 teaspoon garlic powder
- 0.5 teaspoon smoked paprika

Instructions
- In a large pot of salted boiling water, add the potato gnocchi and cook according to package instructions until they float to the surface, which typically takes about 2-3 minutes. Drain and set aside.
- In a medium saucepan over low heat, combine the sour cream, half of the cheddar cheese (1/2 cup), garlic powder, smoked paprika, salt, and pepper. Stir the mixture until the cheese is melted and smooth, about 3-5 minutes.
- In a large mixing bowl, gently fold the cooked gnocchi into the cheese sauce until fully coated. Add in the crumbled bacon and half of the green onions (1/4 cup), and fold to combine all ingredients evenly.
- Preheat your oven to 375°F (190°C). Transfer the gnocchi mixture into a greased 9x13 inch baking dish, spreading it evenly.
- Sprinkle the remaining cheddar cheese over the top of the gnocchi. Bake in the preheated oven for 20 minutes, or until bubbly and golden.
- Remove the dish from the oven and let it cool for a few minutes. Garnish with the remaining sliced green onions and chopped fresh parsley before serving.
