Ingredients

  • 2 cups potato gnocchi
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 0.5 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions

  1. In a large pot of salted boiling water, add the potato gnocchi and cook according to package instructions until they float to the surface, which typically takes about 2-3 minutes. Drain and set aside.
  2. In a medium saucepan over low heat, combine the sour cream, half of the cheddar cheese (1/2 cup), garlic powder, smoked paprika, salt, and pepper. Stir the mixture until the cheese is melted and smooth, about 3-5 minutes.
  3. In a large mixing bowl, gently fold the cooked gnocchi into the cheese sauce until fully coated. Add in the crumbled bacon and half of the green onions (1/4 cup), and fold to combine all ingredients evenly.
  4. Preheat your oven to 375°F (190°C). Transfer the gnocchi mixture into a greased 9x13 inch baking dish, spreading it evenly.
  5. Sprinkle the remaining cheddar cheese over the top of the gnocchi. Bake in the preheated oven for 20 minutes, or until bubbly and golden.
  6. Remove the dish from the oven and let it cool for a few minutes. Garnish with the remaining sliced green onions and chopped fresh parsley before serving.
