Ingredients

  • 4 large russet potatoes
  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 0.5 cup green onions, diced
  • 0.5 cup cooked and crumbled bacon (optional)
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub the potatoes and pierce them with a fork 4-5 times. Rub them with olive oil and sprinkle generously with salt. Place them directly on the oven rack and bake for 45-60 minutes until the skin is crispy, and the inside is tender.
  2. While the potatoes are baking, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the steak pieces with garlic powder, smoked paprika, salt, and black pepper. Once the oil is hot, add the steak bites to the skillet.
  3. Cook the steak for about 8-10 minutes, tossing occasionally until they are nicely browned and cooked to your desired doneness. Remove from heat and set aside.
  4. While the steak is cooking, prepare your toppings. In a small bowl, mix the sour cream with a pinch of salt and pepper. Grate the cheddar cheese and chop the green onions.
  5. Once the potatoes are done, remove them from the oven, and let them cool for a few minutes. Cut them open lengthwise and fluff the insides with a fork. Add a tablespoon of butter to each potato for extra richness.
  6. Spoon a generous portion of steak bites into each potato. Top with shredded cheddar cheese, a dollop of seasoned sour cream, crumbled bacon (if using), and sprinkle with green onions.
  7. For added flair, drizzle some additional olive oil or hot sauce if desired. Serve your loaded baked potatoes warm and enjoy the savory combination of flavors!
