Ingredients

  • 3 large russet potatoes, peeled and diced
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 2 milk
  • 1 4 ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 1 2 crispy bacon bits
  • 2 green onions chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.
  3. In a skillet over medium heat, cook the chopped onion and minced garlic until softened, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain any excess fat.
  5. In a large bowl, combine the cooked potatoes, ground beef mixture, sour cream, milk, ketchup, Worcestershire sauce, smoked paprika, half of the cheddar cheese, salt, and pepper. Mix until well combined.
  6. Transfer the mixture to a greased 9x13-inch casserole dish and spread it out evenly.
  7. Sprinkle the top with the remaining cheddar cheese and bacon bits.
  8. Bake in the preheated oven for 25-30 minutes, until bubbly and the cheese is golden.
  9. Remove from the oven and let it cool for about 5 minutes before serving.
  10. Garnish with chopped green onions before serving.

💡 Chef's Notes

Serve the casserole straight from the dish, or plate portions and drizzle a little extra sour cream on top for a creamy touch. A sprinkle of freshly chopped parsley can add a nice color contrast!
