Loaded Potato and Meatloaf Casserole Easy Comfort Meal
Ingredients
- 3 large russet potatoes, peeled and diced
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 2 milk
- 1 4 ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- to taste Salt and pepper
- 1 2 crispy bacon bits
- 2 green onions chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.
- In a skillet over medium heat, cook the chopped onion and minced garlic until softened, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain any excess fat.
- In a large bowl, combine the cooked potatoes, ground beef mixture, sour cream, milk, ketchup, Worcestershire sauce, smoked paprika, half of the cheddar cheese, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased 9x13-inch casserole dish and spread it out evenly.
- Sprinkle the top with the remaining cheddar cheese and bacon bits.
- Bake in the preheated oven for 25-30 minutes, until bubbly and the cheese is golden.
- Remove from the oven and let it cool for about 5 minutes before serving.
- Garnish with chopped green onions before serving.
💡 Chef's Notes
Serve the casserole straight from the dish, or plate portions and drizzle a little extra sour cream on top for a creamy touch. A sprinkle of freshly chopped parsley can add a nice color contrast!
