Ingredients

  • 1 whole ripe mango, diced
  • 2 whole ripe avocados, diced
  • 1 cup cooked chickpeas (or 1 can, drained and rinsed)
  • 1 whole red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 whole jalapeño, deseeded and minced (optional, for heat)
  • 0.25 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. In a large mixing bowl, add the diced mango, avocado, cooked chickpeas, red bell pepper, red onion, and jalapeño (if using).
  2. Gently toss the ingredients together to combine, being careful not to mash the avocado.
  3. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to create a dressing.
  4. Drizzle the dressing over the salad and toss gently until everything is evenly coated.
  5. Finally, fold in the chopped cilantro for added freshness.
  6. Taste and adjust seasoning if necessary before serving.
