Mango Coconut Overnight Oats Nourishing Breakfast Option
Ingredients
- 1 cup rolled oats
- 1 cup coconut milk
- 1 piece ripe mango, diced
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional)
- 0.5 teaspoon vanilla extract
- 1 pinch salt

Instructions
- In a mixing bowl, combine the rolled oats, coconut milk, chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until all ingredients are well combined.
- Gently fold in the diced mango, reserving a few pieces for topping later.
- Divide the mixture into two jars or airtight containers and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
- In the morning, give the oats a good stir; the mixture should be creamy and thick. If it's too dense, add a splash more coconut milk to reach your desired consistency.
- Top each serving with reserved mango pieces and a sprinkle of toasted coconut flakes for added texture and flavor.
