Ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk
  • 1 piece ripe mango, diced
  • 1 tablespoon chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
  • to taste toasted coconut flakes for topping

Instructions

  1. In a mixing bowl, combine the rolled oats, coconut milk, chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until all ingredients are well combined.
  2. Gently fold in the diced mango, reserving a few pieces for topping later.
  3. Divide the mixture into two jars or airtight containers and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
  4. In the morning, give the oats a good stir; the mixture should be creamy and thick. If it's too dense, add a splash more coconut milk to reach your desired consistency.
  5. Top each serving with reserved mango pieces and a sprinkle of toasted coconut flakes for added texture and flavor.
