Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 whole ripe mango, diced into 1-inch cubes
  • 2 tablespoons lime juice
  • 1 whole zest of lime
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • for garnish fresh cilantro
  • as needed skewers (metal or soaked wooden ones)

Instructions

  1. In a large bowl, combine the lime juice, lime zest, honey, ground cumin, paprika, olive oil, salt, and pepper. Mix well to create a marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. While the shrimp marinate, soak wooden skewers in water for at least 15 minutes to prevent them from burning.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated shrimp and mango cubes onto the skewers, alternating between shrimp and mango for a colorful presentation.
  6. Grill the skewers for approximately 2-3 minutes on each side, or until the shrimp are pink and opaque, and the mango has grill marks.
  7. Once cooked, remove from the grill and garnish with fresh cilantro before serving.
