Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.25 teaspoon cayenne pepper (optional for spice)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. After rinsing the chickpeas, pat them dry thoroughly with a clean kitchen towel. This will help them become crispy when roasted.
  3. In a mixing bowl, combine the maple syrup, olive oil, ground cinnamon, vanilla extract, salt, and cayenne pepper (if using) to create a flavorful coating.
  4. Add the chickpeas to the bowl and toss well to ensure they are evenly coated with the mixture.
  5. Spread the coated chickpeas in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, shaking the baking sheet halfway through for even roasting, until they are golden brown and crispy.
  7. Once done, remove from the oven and let them cool slightly before serving; they will become even crunchier as they cool.

💡 Chef's Notes

For extra spice, add cayenne pepper to the coating.
