Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste Salt and black pepper
  • 0.25 cup pecans, roughly chopped (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and black pepper. Whisk until well blended to create a dressing.
  3. Add the halved Brussels sprouts to the bowl and mix until they are evenly coated with the dressing.
  4. Spread the Brussels sprouts in a single layer on a large baking sheet. If you’re using pecans, sprinkle them over the sprouts.
  5. Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy, stirring halfway through for even cooking.
  6. Once roasted, remove from the oven and let cool for a few minutes.
  7. Transfer the roasted Brussels sprouts to a serving dish and garnish with fresh parsley before serving.

💡 Chef's Notes

Optional pecans add a nice crunch.
