Ingredients

Instructions
- In a medium bowl, toss the diced apples with a sprinkle of cinnamon and set aside to allow the flavors to meld.
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar until well combined.
- In another bowl, beat together the eggs, milk, vanilla extract, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples without overmixing.
- In a deep pot or heavy skillet, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
- Using a spoon or ice cream scoop, drop generous portions of the fritter batter into the hot oil, frying only a few at a time to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, combine the maple syrup and powdered sugar, whisking until smooth. If needed, adjust consistency by adding more syrup or powdered sugar.
- While the fritters are still warm, dip the tops in the maple glaze, allowing the excess to drip off.
