Ingredients

  • 2 large apples (e.g. Granny Smith or Honeycrisp), peeled and diced
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, melted
  • 1 as needed oil for frying
  • 1 cup maple syrup
  • 1 cup powdered sugar

Instructions

  1. In a medium bowl, toss the diced apples with a sprinkle of cinnamon and set aside to allow the flavors to meld.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar until well combined.
  3. In another bowl, beat together the eggs, milk, vanilla extract, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples without overmixing.
  5. In a deep pot or heavy skillet, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
  6. Using a spoon or ice cream scoop, drop generous portions of the fritter batter into the hot oil, frying only a few at a time to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown.
  7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. In a small bowl, combine the maple syrup and powdered sugar, whisking until smooth. If needed, adjust consistency by adding more syrup or powdered sugar.
  9. While the fritters are still warm, dip the tops in the maple glaze, allowing the excess to drip off.
  10. Allow the glaze to set for a few minutes, then serve warm as a delightful treat with a cup of coffee or tea.
