Ingredients

- 0.25 cup honey or maple syrup

- 0.25 cup shredded coconut (unsweetened)

Instructions
- In a large mixing bowl, combine the rolled oats, matcha green tea powder, and salt.
- In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients, stirring until everything is well combined.
- Fold in the shredded coconut and chopped dark chocolate to the mixture.
- Using your hands, form the mixture into small bite-sized balls (about 1 inch in diameter).
- Place the energy bites on a parchment-lined baking sheet.
- Refrigerate for 30 minutes to set the bites.
- Once firm, store the energy bites in an airtight container in the refrigerator.
