Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 2 tablespoons matcha green tea powder
  • 0.25 cup shredded coconut (unsweetened)
  • 0.25 cup chopped dark chocolate or chocolate chips
  • 0.25 teaspoon vanilla extract
  • a pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, matcha green tea powder, and salt.
  2. In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients, stirring until everything is well combined.
  4. Fold in the shredded coconut and chopped dark chocolate to the mixture.
  5. Using your hands, form the mixture into small bite-sized balls (about 1 inch in diameter).
  6. Place the energy bites on a parchment-lined baking sheet.
  7. Refrigerate for 30 minutes to set the bites.
  8. Once firm, store the energy bites in an airtight container in the refrigerator.
