Mediterranean Baked Fish Flavorful and Simple Dish
Ingredients
- 4 fillets white fish (such as cod or sea bass)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 whole lemon, thinly sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 0.5 teaspoon red pepper flakes (optional)

- 1 cup cherry tomatoes, halved
- 0.5 cup Kalamata olives, pitted and halved
- for garnish fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper to create a marinade.
- Place the fish fillets on a large baking sheet lined with parchment paper. Brush the marinade evenly over both sides of the fish.
- Arrange the lemon slices on top of the fish fillets. Scatter the cherry tomatoes and Kalamata olives around the fish on the baking sheet.
- Drizzle any remaining marinade over the vegetables and season them with a pinch of salt and pepper.
- Bake in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and the tomatoes are roasted.
- Remove the baking sheet from the oven and let it rest for a couple of minutes.
- Garnish with freshly chopped parsley before serving.
