Ingredients

  • 4 fillets white fish (such as cod or sea bass)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 whole lemon, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and halved
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper to create a marinade.
  3. Place the fish fillets on a large baking sheet lined with parchment paper. Brush the marinade evenly over both sides of the fish.
  4. Arrange the lemon slices on top of the fish fillets. Scatter the cherry tomatoes and Kalamata olives around the fish on the baking sheet.
  5. Drizzle any remaining marinade over the vegetables and season them with a pinch of salt and pepper.
  6. Bake in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and the tomatoes are roasted.
  7. Remove the baking sheet from the oven and let it rest for a couple of minutes.
  8. Garnish with freshly chopped parsley before serving.
