Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red and yellow), diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely chopped
  • 0.5 cup Kalamata olives, pitted and sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 4 large whole wheat tortillas or wraps
  • to taste Salt and pepper
  • optional Crumbled feta cheese for topping

Instructions

  1. In a mixing bowl, combine the chickpeas, cucumber, bell peppers, cherry tomatoes, red onion, olives, and parsley. Mix well until all ingredients are evenly combined.
  2. In a separate small bowl, whisk together tahini, lemon juice, minced garlic, salt, and pepper until smooth.
  3. Pour the tahini dressing over the chickpea mixture and gently toss to coat everything evenly.
  4. Lay out the whole wheat tortillas on a clean surface or plate. Spoon an equal amount of the chickpea mixture onto the center of each wrap.
  5. If using, sprinkle crumbled feta cheese over the mixture.
  6. Fold the sides of the tortilla inward, then roll up from the bottom to form a tight wrap.
  7. Place the wraps seam-side down on a serving plate and optionally slice them in half diagonally for easier handling.

Add more vegetables or protein as desired.
