Mediterranean Chickpea Wraps Tasty and Healthy Meal
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup bell peppers (red and yellow), diced
- 0.5 cup cherry tomatoes, halved
- 0.25 cup red onion, finely chopped
- 0.5 cup Kalamata olives, pitted and sliced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 4 large whole wheat tortillas or wraps
- to taste Salt and pepper
- optional Crumbled feta cheese for topping
Instructions
- In a mixing bowl, combine the chickpeas, cucumber, bell peppers, cherry tomatoes, red onion, olives, and parsley. Mix well until all ingredients are evenly combined.
- In a separate small bowl, whisk together tahini, lemon juice, minced garlic, salt, and pepper until smooth.
- Pour the tahini dressing over the chickpea mixture and gently toss to coat everything evenly.
- Lay out the whole wheat tortillas on a clean surface or plate. Spoon an equal amount of the chickpea mixture onto the center of each wrap.
- If using, sprinkle crumbled feta cheese over the mixture.
- Fold the sides of the tortilla inward, then roll up from the bottom to form a tight wrap.
- Place the wraps seam-side down on a serving plate and optionally slice them in half diagonally for easier handling.
