Ingredients

  • 4 fillets cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • to taste Salt and pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and halved
  • 0.25 cup fresh parsley, chopped
  • 1 unit Juice of 1 lemon
  • for serving Lemon wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, minced garlic, oregano, paprika, cumin, salt, and pepper to create a marinade.
  3. Place the cod fillets in a baking dish and brush them generously with the marinade, ensuring to coat both sides.
  4. Scatter the halved cherry tomatoes and Kalamata olives around the cod in the baking dish.
  5. Squeeze the juice of one lemon over the entire dish.
  6. Cover the baking dish with foil and bake in the preheated oven for 15 minutes.
  7. Remove the foil and bake for an additional 10 minutes or until the cod flakes easily with a fork and the tomatoes are blistered.
  8. Garnish with fresh parsley before serving. Enjoy the dish with lemon wedges on the side.
