Mediterranean Style Baked Cod Flavorful Dinner Recipe
Ingredients
- 4 fillets cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 0.5 teaspoon ground cumin

- 1 cup cherry tomatoes, halved
- 0.5 cup Kalamata olives, pitted and halved
- 0.25 cup fresh parsley, chopped
- 1 unit Juice of 1 lemon

Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, minced garlic, oregano, paprika, cumin, salt, and pepper to create a marinade.
- Place the cod fillets in a baking dish and brush them generously with the marinade, ensuring to coat both sides.
- Scatter the halved cherry tomatoes and Kalamata olives around the cod in the baking dish.
- Squeeze the juice of one lemon over the entire dish.
- Cover the baking dish with foil and bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cod flakes easily with a fork and the tomatoes are blistered.
- Garnish with fresh parsley before serving. Enjoy the dish with lemon wedges on the side.
