Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs (preferably seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup minced garlic (about 12 cloves)
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1/2 cup ketchup (for topping)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper for easier removal.
  2. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing for about 3-5 minutes until fragrant and translucent. Remove from heat and let cool slightly.
  3. In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, cooled garlic and onion mixture, chopped parsley, eggs, milk, oregano, salt, and pepper. Mix the ingredients gently with your hands or a spoon until fully combined, being careful not to overwork the meat.
  4. Transfer the mixture to the prepared loaf pan and shape it into a loaf. Smooth the top and sides using a spatula or your hands for a neater presentation.
  5. Brush the top with ketchup evenly for added moisture and flavor during baking.
  6. Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Once cooked, remove the meatloaf from the oven and let it sit for about 10-15 minutes before slicing. This helps retain its juices for that melt-in-your-mouth texture.
  8. Carefully slice the meatloaf into hearty pieces. Serve warm with your favorite sides, such as mashed potatoes or a fresh salad.
