Ingredients

  • 2 packages frozen cheese ravioli
  • 1 jar marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 0.25 cup fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and Italian seasoning. Remove from heat and set aside.
  4. In a large bowl, combine the ricotta cheese, half of the Parmesan cheese, and two-thirds of the mozzarella cheese. Mix in the sautéed spinach and garlic. This will be your filling mixture.
  5. In a 9x13-inch baking dish, spread a thin layer of marinara sauce on the bottom to prevent sticking.
  6. Layer half of the frozen ravioli over the sauce, followed by half of the cheese filling mixture, and a third of the remaining marinara sauce.
  7. Repeat the layering process with the remaining ravioli, cheese mixture, and marinara sauce, finishing with the last third of marinara on top.
  8. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the casserole.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  10. Allow the casserole to rest for 10 minutes before serving. Garnish with fresh chopped basil for a burst of color and flavor.

Serve directly from the baking dish or scoop individual portions onto plates, garnished with a sprig of basil and a sprinkle of additional Parmesan cheese for an elegant touch.
