Ingredients

  • 2 none ripe bananas, mashed
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.25 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup mini chocolate chips (optional)
  • 0.25 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the mashed bananas, melted butter, granulated sugar, and brown sugar. Mix well until everything is combined.
  3. Beat in the egg and vanilla extract to the banana mixture until smooth and creamy.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix.
  6. Fold in the mini chocolate chips if desired for an extra touch of sweetness.
  7. Evenly distribute the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  8. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
