Mini Banana Muffins Sweet and Simple Treat Recipe
Ingredients
- 2 none ripe bananas, mashed
- 1 cup all-purpose flour
- 0.5 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
- 0.25 cup granulated sugar
- 0.25 cup brown sugar, packed
- 0.25 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 0.5 cup mini chocolate chips (optional)
- 0.25 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, combine the mashed bananas, melted butter, granulated sugar, and brown sugar. Mix well until everything is combined.
- Beat in the egg and vanilla extract to the banana mixture until smooth and creamy.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix.
- Fold in the mini chocolate chips if desired for an extra touch of sweetness.
- Evenly distribute the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
