Moroccan Raw Carrot Salad with Raisins Delight
Ingredients
- 4 large carrots, peeled and grated
- 0.5 cup raisins (preferably golden)
- 0.25 cup slivered almonds, lightly toasted
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon cayenne pepper (optional)
- 2 tablespoons honey or maple syrup
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- to taste salt and pepper
- for garnish fresh parsley or mint leaves
Instructions
- In a large mixing bowl, combine the grated carrots and raisins, stirring thoroughly.
- In a separate small bowl, whisk together the ground cumin, ground cinnamon, cayenne pepper (if using), honey or maple syrup, lemon juice, and olive oil until well combined.
- Pour the dressing over the carrot mixture and toss gently until the carrots are evenly coated.
- Add in the toasted slivered almonds, and season with salt and pepper to taste. Toss once more to distribute the almonds.
- Let the salad sit for about 15 minutes to allow the flavors to meld together.
- Just before serving, garnish the salad with finely chopped fresh parsley or mint leaves for a touch of color and freshness.
