Ingredients

  • 4 large carrots, peeled and grated
  • 0.5 cup raisins (preferably golden)
  • 0.25 cup slivered almonds, lightly toasted
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper (optional)
  • 2 tablespoons honey or maple syrup
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • to taste salt and pepper
  • for garnish fresh parsley or mint leaves

Instructions

  1. In a large mixing bowl, combine the grated carrots and raisins, stirring thoroughly.
  2. In a separate small bowl, whisk together the ground cumin, ground cinnamon, cayenne pepper (if using), honey or maple syrup, lemon juice, and olive oil until well combined.
  3. Pour the dressing over the carrot mixture and toss gently until the carrots are evenly coated.
  4. Add in the toasted slivered almonds, and season with salt and pepper to taste. Toss once more to distribute the almonds.
  5. Let the salad sit for about 15 minutes to allow the flavors to meld together.
  6. Just before serving, garnish the salad with finely chopped fresh parsley or mint leaves for a touch of color and freshness.
