Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup buttermilk
  • 1 4 maple syrup
  • 1 large egg
  • 1 4 unsalted butter, melted
  • 4 slices cooked bacon or sausage patties
  • 4 slices cheddar cheese
  • 1 cup Maple syrup for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners for easy removal.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, mix the buttermilk, maple syrup, egg, and melted butter until fully integrated.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid over-mixing, as this will make the muffins dense.
  5. Spoon a small amount of the batter into the bottom of each muffin cavity (about 1/3 full). Then, press a slice of bacon or sausage patty into each one, and top with a slice of cheddar cheese. Finally, cover with the remaining batter until the muffin tin is about 2/3 full.
  6. Place the muffin tin in the preheated oven and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  7. Once baked, allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Drizzle with additional maple syrup before serving for an extra sweet touch.
