Ingredients

  • 0.25 cup maple syrup
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.33 cup mini dark chocolate chips
  • 0.25 cup finely chopped walnuts (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. In a mixing bowl, combine the almond flour, peanut butter, maple syrup, vanilla extract, and salt.
  2. Mix the ingredients together until well combined. The mixture should be thick and slightly sticky.
  3. Fold in the mini chocolate chips, walnuts, and chia seeds until evenly distributed.
  4. Using your hands, scoop out small amounts of the dough and roll them into bite-sized balls (about 1-inch in diameter).
  5. Place the cookie dough bites on a parchment-lined tray or plate.
  6. For an added touch, you can roll the bites in extra chocolate chips or shredded coconut to coat them.
  7. Refrigerate the bites for at least 30 minutes to allow them to firm up before serving.
