Ingredients

  • 1 cup rolled oats
  • 0.5 cup natural peanut butter
  • 0.25 cup honey or maple syrup
  • 0.5 cup ground flaxseed
  • 0.25 cup mini chocolate chips
  • 0.25 cup shredded coconut (unsweetened)
  • 1 teaspoon vanilla extract
  • a pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt. Stir well to mix the dry ingredients.
  2. In another bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until well combined and smooth.
  3. Pour the wet mixture into the bowl with the dry ingredients. Stir everything together until fully combined. You may find it easier to use your hands to mix.
  4. Gently fold in the mini chocolate chips and shredded coconut until evenly distributed.
  5. Once the mixture is well combined, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet or plate.
  6. Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to help them firm up.
  7. Serve chilled or at room temperature, and enjoy a delicious, nutritious snack!
