Ingredients

  • 1 cup fresh strawberries, hulled and pureed
  • 8 oz white chocolate, chopped
  • 1 cup cream cheese, softened
  • 1.5 cups graham cracker crumbs
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch salt
  • as needed additional graham cracker crumbs, for coating
  • as needed fresh strawberries, for garnish

Instructions

  1. In a heatproof bowl, melt the chopped white chocolate over a double boiler, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a mixing bowl, combine the softened cream cheese and strawberry puree. Mix until smooth and well combined.
  3. Add the melted white chocolate to the cream cheese mixture and stir until fully integrated.
  4. Gradually add the graham cracker crumbs, powdered sugar, vanilla extract, and a pinch of salt. Mix until a dough forms.
  5. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
  6. Roll each truffle in the additional graham cracker crumbs to coat.
  7. Place the truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  8. Once set, garnish each truffle with a half strawberry on top before serving.

💡 Chef's Notes

Chill the truffles for a firmer texture.
