One Pot Creamy Cajun Chicken Pasta Bake Delight
Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups chicken broth
- 8 ounces uncooked penne pasta
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese

Instructions
- In a large, deep skillet or oven-safe pot, heat the olive oil over medium-high heat. Add the diced chicken and sprinkle with Cajun seasoning. Sauté until the chicken is cooked through and golden brown, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, red bell pepper, and green bell pepper. Sauté for about 4-5 minutes, or until the vegetables begin to soften.
- Stir in the undrained diced tomatoes and chicken broth, bringing the mixture to a boil.
- Add the uncooked penne pasta to the pot, stirring well to combine. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
- Once the pasta is cooked, return the chicken to the pot and pour in the heavy cream. Stir until everything is well combined and creamy. Season with salt and pepper to taste.
- Preheat your oven to 375°F (190°C).
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the pasta mixture.
- Transfer the pot to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
