Ingredients

  • 8 ounces spaghetti or penne pasta
  • 2 tablespoons olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon red pepper flakes
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 4 cups chicken broth
  • 1 tablespoon Italian seasoning
  • to taste salt and pepper
  • 1 cup fresh spinach
  • 1 4 grated Parmesan cheese (for serving)
  • as needed fresh basil leaves (for garnish)

Instructions

  1. In a large pot or deep skillet, heat the olive oil over medium heat.
  2. Add the spicy Italian sausage to the pot, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the diced onion, garlic, and red bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
  4. Sprinkle in the red pepper flakes and stir for another minute to release the flavor.
  5. Pour in the can of diced tomatoes with their juices, chicken broth, and Italian seasoning. Stir to combine.
  6. Bring the mixture to a boil, then add the pasta. Stir to ensure the pasta is submerged in the liquid.
  7. Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has absorbed.
  8. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.

Adjust the red pepper flakes to control the spice level.
