One-Pot Taco Mac Simple and Hearty Delight
Ingredients
- 1 pound ground beef or turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 cups elbow macaroni
- 3 cups chicken or vegetable broth
- 1 cup canned diced tomatoes (with juices)
- 1 cup corn (canned or frozen)
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 2 sour cream
- 1 tablespoon olive oil
- to taste salt and pepper
- optional chopped cilantro, sliced jalapeños, extra cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Sprinkle the taco seasoning over the meat mixture and stir to combine, letting the spices toast for about 1 minute.
- Pour in the chicken or vegetable broth, followed by the elbow macaroni, diced tomatoes, corn, and black beans. Stir everything together until well combined.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the macaroni is tender, stirring occasionally to prevent sticking.
- Remove from heat and stir in the shredded cheddar cheese and sour cream until melted and creamy.
- Season with salt and pepper to taste.
