Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups elbow macaroni
  • 3 cups chicken or vegetable broth
  • 1 cup canned diced tomatoes (with juices)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 2 sour cream
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • optional chopped cilantro, sliced jalapeños, extra cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Sprinkle the taco seasoning over the meat mixture and stir to combine, letting the spices toast for about 1 minute.
  5. Pour in the chicken or vegetable broth, followed by the elbow macaroni, diced tomatoes, corn, and black beans. Stir everything together until well combined.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the macaroni is tender, stirring occasionally to prevent sticking.
  7. Remove from heat and stir in the shredded cheddar cheese and sour cream until melted and creamy.
  8. Season with salt and pepper to taste.

Serve in bowls topped with chopped cilantro, sliced jalapeños, and extra cheese for an inviting presentation.
