Ingredients

  • 4 fillets tilapia
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 2 large eggs
  • 2 tablespoons milk
  • 2 tablespoons olive oil
  • for serving fresh lemon wedges

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a shallow bowl, whisk together the eggs and milk until well combined.
  3. In another shallow bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, oregano, paprika, salt, and pepper until evenly combined.
  4. Dip each tilapia fillet first into the egg mixture, ensuring it's fully coated, then immediately transfer it to the Parmesan breadcrumb mixture, pressing gently to adhere a good layer of the crust.
  5. Heat olive oil in a large skillet over medium heat. Once hot, carefully place the crusted fillets in the skillet and cook for about 2-3 minutes on each side until golden brown, being careful not to overcrowd the pan. You may need to do this in batches.
  6. Transfer the browned tilapia fillets to the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the fish flakes easily with a fork and the crust is crispy.
  7. Remove from the oven and serve immediately with fresh lemon wedges to squeeze over the top.
