Ingredients

  • 1 cup creamy peanut butter
  • 1.5 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 1.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini peanut butter cups, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter, creamy peanut butter, brown sugar, and granulated sugar. Mix well until you achieve a smooth and creamy consistency.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips and chopped mini peanut butter cups, ensuring an even distribution throughout the batter.
  6. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean (a few crumbs are okay).
  8. Allow the blondies to cool in the pan for at least 15 minutes before lifting them out using the parchment paper (if used). Then cool completely on a wire rack.
  9. Once cooled, cut into squares and serve.

💡 Chef's Notes

For easier removal, line the baking pan with parchment paper.
