Ingredients

  • 1 cup natural peanut butter
  • 0.5 cup honey or maple syrup
  • 1 cup rolled oats
  • 0.5 cup protein powder (vanilla or chocolate)
  • 0.25 cup ground flaxseed
  • 0.25 cup mini chocolate chips (optional)
  • 0.25 cup shredded coconut (unsweetened)
  • 1 pinch salt

Instructions

  1. In a large mixing bowl, combine the natural peanut butter and honey (or maple syrup) until smooth and well blended.
  2. Add the rolled oats, protein powder, ground flaxseed, and a pinch of salt into the peanut butter mixture, stirring until all ingredients are fully incorporated.
  3. If using, fold in the mini chocolate chips and shredded coconut for added texture and sweetness.
  4. Once the mixture is combined, use your hands to form small balls (about the size of a tablespoon) and place them on a parchment-lined baking sheet.
  5. Once all the mixture is rolled into balls, refrigerate for at least an hour to firm them up.
  6. After they’ve cooled and set, transfer to an airtight container for storage, where they can be kept in the fridge for up to two weeks.
