Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup cottage cheese
  • 1 cup whipped cream
  • 0.5 cup shredded coconut
  • 0.5 cup mini marshmallows
  • 0.25 cup chopped pecans (or walnuts)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • to taste Fresh pineapple slices for garnish

Instructions

  1. In a large mixing bowl, combine the crushed pineapple with cottage cheese. Stir until well blended.
  2. In another bowl, whip the cream until soft peaks form.
  3. Gently fold the whipped cream into the pineapple and cottage cheese mixture until fully incorporated.
  4. Add in the shredded coconut, mini marshmallows, and chopped pecans. Drizzle with honey or maple syrup and add the vanilla extract. Mix gently until everything is evenly combined.
  5. Spoon the mixture into individual dessert cups or a large serving bowl.
  6. Chill in the refrigerator for at least 1 hour to allow flavors to meld and the dessert to set.
  7. Before serving, garnish with fresh pineapple slices and a sprinkle of coconut on top for an extra touch.

💡 Chef's Notes

Serve in clear glass cups to showcase the colorful layers, and consider adding a sprig of mint for garnish.
