Ingredients

  • 1 pound ground chicken (or turkey)
  • 0.5 cup breadcrumbs
  • 0.25 cup green onions, finely chopped
  • 1 large egg, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, grated
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 cup fresh pineapple, cut into chunks
  • 1 medium red bell pepper, cut into squares
  • 1 cup teriyaki sauce (store-bought or homemade)
  • to taste sesame seeds for garnish
  • as needed skewers (wooden or metal)

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, green onions, egg, soy sauce, grated ginger, garlic powder, and black pepper. Mix until well combined.
  2. Shape the mixture into small meatballs, about 1 inch in diameter. You should have about 20 meatballs.
  3. Preheat your grill or grill pan to medium heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. On each skewer, thread a meatball, followed by a chunk of pineapple, and then a piece of red bell pepper. Repeat until the skewer is filled, leaving some space at the ends for handling.
  5. Brush the skewers with teriyaki sauce and place them on the grill. Cook for about 10-12 minutes, turning occasionally and brushing with more sauce until the meatballs are cooked through and have a nice glaze.
  6. Remove from the grill and sprinkle with sesame seeds before serving.

💡 Chef's Notes

Soak wooden skewers in water for 30 minutes to prevent burning.
