Pineapple Teriyaki Meatball Skewers Easy Grilling Delight
Ingredients
- 1 pound ground chicken (or turkey)
- 0.5 cup breadcrumbs
- 0.25 cup green onions, finely chopped
- 1 large egg, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon ginger, grated
- 1 teaspoon garlic powder
- 0.5 teaspoon black pepper
- 1 cup fresh pineapple, cut into chunks
- 1 medium red bell pepper, cut into squares
- 1 cup teriyaki sauce (store-bought or homemade)
- to taste sesame seeds for garnish
- as needed skewers (wooden or metal)
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, green onions, egg, soy sauce, grated ginger, garlic powder, and black pepper. Mix until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter. You should have about 20 meatballs.
- Preheat your grill or grill pan to medium heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- On each skewer, thread a meatball, followed by a chunk of pineapple, and then a piece of red bell pepper. Repeat until the skewer is filled, leaving some space at the ends for handling.
- Brush the skewers with teriyaki sauce and place them on the grill. Cook for about 10-12 minutes, turning occasionally and brushing with more sauce until the meatballs are cooked through and have a nice glaze.
- Remove from the grill and sprinkle with sesame seeds before serving.
