Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 1 cup freeze-dried raspberries (crushed)
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well combined.
  2. Add the crushed freeze-dried raspberries, shredded coconut, chia seeds, vanilla extract, and a pinch of salt to the mixture.
  3. Mix everything thoroughly until the ingredients are evenly distributed. If the mixture is too sticky, add a little more oats; if too dry, add a bit more almond butter.
  4. Once mixed, use your hands to form small balls, about 1 inch in diameter. Place the energy bites on a parchment-lined baking sheet or plate.
  5. Refrigerate the energy bites for at least 30 minutes to firm up.
