Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 0.5 cup cream cheese, softened
  • 0.25 cup powdered sugar
  • 0.5 teaspoon vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard cupcake pan with paper liners.
  2. In a large bowl, sift together the flour, sugar, baking soda, baking powder, salt, and cocoa powder until well combined.
  3. In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are fine.
  5. In a separate bowl, beat the softened cream cheese, powdered sugar, and the extra vanilla extract until smooth and fluffy.
  6. Using a cookie scoop, fill each cupcake liner about one-third full with the red velvet batter. Drop a teaspoon of the cream cheese mixture in the center, and then cover with more red velvet batter until the liner is about two-thirds full.
  7. Use a skewer or toothpick to gently swirl the batter and cream cheese filling together for a marbled effect.
  8. Place in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove cupcakes from the pan and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, you can frost the cupcakes with a simple cream cheese frosting or enjoy them plain!

💡 Chef's Notes

Arrange the cupcakes on a decorative platter and top each with a small dollop of whipped cream or cream cheese frosting. You can sprinkle some cocoa powder or red sprinkles on top for an added pop!
