Red Velvet Marble Cupcakes Deliciously Unique Treat
Ingredients
- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 0.5 teaspoon baking soda
- 1 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup unsweetened cocoa powder
- 0.5 cup vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 0.5 cup cream cheese, softened
- 0.25 cup powdered sugar
- 0.5 teaspoon vanilla extract (for cream cheese filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a standard cupcake pan with paper liners.
- In a large bowl, sift together the flour, sugar, baking soda, baking powder, salt, and cocoa powder until well combined.
- In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are fine.
- In a separate bowl, beat the softened cream cheese, powdered sugar, and the extra vanilla extract until smooth and fluffy.
- Using a cookie scoop, fill each cupcake liner about one-third full with the red velvet batter. Drop a teaspoon of the cream cheese mixture in the center, and then cover with more red velvet batter until the liner is about two-thirds full.
- Use a skewer or toothpick to gently swirl the batter and cream cheese filling together for a marbled effect.
- Place in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove cupcakes from the pan and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, you can frost the cupcakes with a simple cream cheese frosting or enjoy them plain!
