Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 cup tomato juice
  • 0.5 cup fresh lime juice (about 4 limes)
  • 1 whole avocado, diced
  • 1 medium cucumber, diced
  • 0.5 medium red onion, finely chopped
  • 1 whole jalapeño, deseeded and minced
  • 0.25 cup cilantro, chopped
  • to taste salt and black pepper
  • for serving tortilla chips

Instructions

  1. In a large mixing bowl, combine the tomato juice and fresh lime juice, stirring well to blend.
  2. Add the diced avocado, cucumber, and red onion to the bowl, followed by the minced jalapeño and chopped cilantro.
  3. Gently fold in the cooked shrimp to avoid breaking them apart.
  4. Season the mixture with salt and black pepper to taste.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Once chilled, give the cocktail a gentle stir and serve in individual bowls.

💡 Chef's Notes

Garnish each serving with an additional sprig of cilantro and a lime wedge on the side. Arrange tortilla chips elegantly around the bowl for an appealing display.
